Although tea has much less caffeine than coffee, a good cup of tea will enliven the mind, refresh the body, and cheer the spirit. If caffeine intake is the objective, keeping a fresh pot going all day provides a gentle feeling of contentment and alertness. You can't drink too much tea!

For those hoping to minimize their ceffeine consumption, much of the caffeine can be washed off in a quick preliminary infusion. Simply pour water (at least 185° F) over the fresh leaves and then pour away the liquor immediately. The second pouring should retain most of the available flavor and aroma, while containing significantly less caffeine.
