What's Gongfu Tea?

Gongfu Tea takes its name from the same term kung-fu with which we are all familiar. The use of the term with tea implies similar types of concentration, practice, and spiritual benefit. In the west, we have long been exposed to the formal Japanese tea ceremony, a ritual which originated during the Tang dynasty in China around 800. Traveling Japanese zen pilgrims picked up and then perfected a strict form of tea preparation.
